Irish Cuisine: Boxty And Colcannon


 

Boxty. This Irish traditional dish means “poor house bread”. Boxty is made of raw, finely grated potato mixed with mashed potato, flour, baking soda, buttermilk and eggs then cooked like a pancake on a griddle pan.

Ingredients
4 large baking potatoes
1 bunch spring onions finely sliced
100g plain flour
1 egg white
150ml buttermilk
1 tsp bicarbonate of soda
3 tbsp butter (or more if you need)
2 tbsp vegetable oil (or more if you need)

For the tomatoes
6 small bunches cherry tomatoes

To serve
12 rashers back bacon
6 egg
Eggs, cooked how you like them

Colcannon. Colcannon, which means “white-headed cabbage”, is made of mashed potato with kale or cabbage.

Ingredients
1kg potato well scrubbed (cut any large ones in half)
100g butter
140g sliced back bacon, finely chopped
1 small Savoy cabbage, finely shredded
150ml double cream
